It isn’t really rare… it’s been cooked sous-vide. Low temperatures, long cooking time. Gives it that aspect but it is actually cooked. And delicious, I’m guessing.
What kind of sous-vide setup did you use? I’ve been planning to home brew a solution…but haven’t gotten around to it. Now I’m thinking of how sous-vide + summer grilling could be very nice…

A bit over an hour at about 133°F.

Looks very yummy! Did you also pan fried the steak a bit to get the slightly seared look? For how long did you sear it and in which heat setting??

I seared about a minute each side at a very high heat in a cast-iron pan with safflower oil.
