How did it turn out? I have done this. You gotta watch out for air in the bag and it floating & of course temp & time. A steak sauce trick I like is put sauce in bag & seal twice (insurance for 2nd step). Then put steak in and vacuum seal. Cook in bath and towards the end, you have a sauce that is ready to go at the same time as the meat.
