Looks good! Were the carrots sauteed a bit first to soften them a tad before adding to the omelete? I can honestly say I have never thought to include carrots in an omelete before. I like the idea and will have to try it. This meal looks like it would be great both as a breakfast or a dinner. Hope you enjoyed it!

Yup. The carrots were sautéed first with the scallions, then the eggs. After the omelet was folded over, it was stuffed with buffalo mozzarella and salt. You can’t see it in the pic but it made it that much yummier.

Whoa, that must have been amazingly delicious! I do enjoy a good buffalo mozzarella – especially when it is in a panini. I even tried it in mac and cheese once.
