Hi Matt, This dessert looks incredible. Correct me if I’m wrong, but is that a sugar balloon filled with olive oil? I imagine that the chef’s intention was to allow it to ooze over the chocolate ganache. Also, can I ask what the white powder is? The dessert looks super yums! Thanks!

My goodness, this looks absolutely incredible! The chocolate looks a bit light in color; does it have a more milky taste than sharp taste?
